Cocoa Powders represent problems related to dust control as well as uniform wetting and dispersions. Our processes eliminate both concerns. VACUCAM® Slurry Processes for Dairy Mixes,Beverages, and Sauces are available in several pre-engineered packages to accommodate the type of process required for both the liquid side and the dry side.
Processes for Beverages, Cheese Mixes, Ice Cream Mixes, and Yogurt Mixes can be addressed with the Vacucam® EJM 2000 skidded unit as the heart of the liquid side process. It will accommodate processes for single pass or batch recycle processes. For processes incorporating bulk bags of cocoa powder, a de-lumper is incorporated on the dry side to reduce the product lumps before delivery into the surge hoppers.
The dry side of the process will be configured based on the volume of individual ingredients, the number of individual ingredients serving the process and the type of package used for shipping the individual dry ingredients. Dry side system components can be a single Bag Dump Hopper for minor ingredients, a single PH Bulk Bag Surge Hopper for bulk bag ingredients, multiple Bulk Bag Surge Hoppers, or any combination as required. Gums/Stabilizers are dispersed completely without agglomerates and are not exposed to excessive SHEAR. This combination reduces usage dramatically. We have designed systems which effectively produce a gum slurry followed immediately by the dispersion of cocoa powered into the fully hydrated gum.
VACUCAM® Slurry Processes for Gums, Thickeners, Stabilizers and other functional ingredients are designed for single pass mixing directly into the top of a mix tank. The Vacucam® Mixer on a Stand (MOS) skidded unit provides a versatile unit to accommodate a single or multiple mix tanks at a range of elevations. For rapidly functional high viscosity ingredients, the MOS process delivering the finished slurry directly into an agitated tank is the most effective. For lower viscosity pumpable finished slurries, the in-line VACUCAM® EJM 2000 skidded unit offers a versatile process to accommodate high capacity and/or frequent batch processes serving one or many use points.
Typically the ingredient weighments are small and can be pre-weighed into a Bag Dump Hopper. If the process utilizes larger volumes of dry ingredients, the process can include the use of a PH Bulk Bag Surge Hopper with loss-in-weight controls.
